Turkey Meatloaf
Ingredients
1 cup chopped onion
1 T. olive oil
1/2 tsp. salt
1/4 tsp. ground pepper
1/4 tsp. dried thyme leaves
1 T. Worcestershire sauce
1/3 cup chicken stock
1 tsp. tomato paste
1 1/2 lbs. ground turkey
1 cup dry bread crumbs
1 egg, beaten
3/4 cup ketchup
1 T. brown sugar
1 tsp. mustard
Preparation
Preheat oven to 350. In a saute pan, over medium-low heat, cook the onions, salt and pepper in olive oil about 15 minutes.
Stir in thyme, Worcestershire, chicken stock and tomato paste. Allow to cool to room temperature. In a large bowl, combine
the turkey, bread crumbs, egg and onion mixture. Mix well and shape into a loaf on baking pan sprayed with non-stick spray.
Combine ketchup, brown sugar and mustard. Pour mixture over meatloaf. Bake for 1 hour. (A pan of hot water in the oven
under the meatloaf will help to keep it from cracking). Serves 8
