Pineapple-Chili Roasted Chicken

Ingredients
8 pieces of chicken
1 cup onion, diced
1 medium bell pepper, diced
1 cup chicken broth
1 jar American Spoon Pineapple-Chili BBQ Sauce
2 celery stalks, diced
3 carrots, peeled, diced
Salt and Pepper to taste
4 cups cooked rice

Preparation
Preheat oven to 350. In a large skillet, brown chicken on both sides. Remove chicken from skillet to 9 x 13 baking pan. Add vegetables to skillet, and saute on medium high for 3-5 minutes. Arrange vegetables around chicken in baking pan. Pour chicken broth over chicken and vegetables, sprinkle with salt and pepper if desired. Cover with aluminum foil and bake for 45 minutes. Remove foil and pour entire jar of BBQ Sauce over chicken. Reduce oven heat to 325 and bake uncovered for an additional 30-40 minutes. Arrange chicken on serving platter. Place chicken and vegetables on rice. Pour sauce in baking pan over finished platter.
