Nectarine Upside Down Cake

Ingredients
1 1/4 cups all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
3 T. butter
1/4 cup brown sugar
5 T. butter, softened
1 cup granulated sugar
1 large egg
1 tsp. vanilla extract
3/4 cup milk
4 nectarines, pitted and thinly sliced

Preparation
Preheat oven to 350. Grease a 9-inch cake pan. In a bowl, combine the flour, baking powder and salt. Set aside. In the prepared pan, combine 3 T. butter and the brown sugar. Place pan inside preheated oven until the butter melts and begins to bubble. Set aside. In a large bowl, cream together the 5 T. butter and granulated sugar. Beat in the egg and stir in the vanilla. Add the flour mixture alternately with the milk, just until well combined. Arrange nectarine slices in a circular pattern in the bottom of pan, overlapping slightly. Pour batter over fruit. Bake for 35-40 minutes until cake tests done. Cool 15-20 minutes before serving. Serves 12
