Israeli Salad
Ingredients
3 tomatoes, diced
1 cucumber, peeled and diced
1 yellow pepper, diced
1/2 cup onion, diced
4 T. coarsely chopped fresh parsley
1/2 lemon, juiced
1/4 cup extra virgin olive oil
Salt to taste
Fresh ground pepper black pepper to taste
Preparation
In a large bowl, toss together the tomatoes, cucumber, yellow pepper, and onion. Add the parsley, lemon juice, and olive oil,
and mix thoroughly to coat. Season to taste with salt and pepper. Serve chilled or at room temperature. This is a light,
refreshing salad often served in a pita with falafel. Serves 6
