Carrot Muffins
Ingredients
2 cups all-purpose flour
1 1/4 cups granulated sugar
3/4 tsp. baking soda
1 1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
2 cups grated carrots
1 large apple, peeled, cored and grated
1/2 cup raisins
1 cup coconut
3 large eggs
3/4 cup canola oil
1 tsp. vanilla extract
Preparation
In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt and ground cinnamon.
Stir in the carrot, apple, raisins and coconut. In a separate bowl, beat together the eggs, oil and vanilla
extract. Stir egg mixture into the carrot/flour mixture, just until moistened. Evenly divide the batter between
prepared muffin cups and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
Remove from oven and let cool on a wire rack.
