Blueberry Zucchini Bread

Ingredients
3 eggs, lightly beaten
1 cup vegetable oil
1 tsp. vanilla
2 cups granulated sugar
1/3 cup orange juice
3 cups all-purpose flour
1 tsp. baking powder
1/4 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
2 cups shredded zucchini
1 pint fresh blueberries

Preparation
Preheat oven to 350. Spray two 9-inch loaf pans with non-stick product. In a large bowl, beat together the eggs, oil, vanilla and sugar. Stir in orange juice. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt. Stir into batter. Gently fold in zucchini and blueberries. Pour into prepared pans. Bake for 50 minutes, or until toothpick inserted in center of loaf comes out clean. Cool in the pan on a wire rack for ten minutes. Remove from pans and let cool completely.
