Applesauce Crumb Cake
Ingredients
Topping:
1/2 cup butter
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 tsp. ground cinnamon
1 cup flour
Cake:
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
3/4 tsp. ground cinnamon
1/2 tsp. salt
6 T. unsalted butter, softened
1 1/4 cups granulated sugar
2 large eggs
3/4 cup applesauce
1 cup sour cream
Preparation
Topping: Melt butter in medium bowl in microwave. Add brown sugar, granulated sugar and cinnamon. Stir until
blended. Add flour, mixing until well combined. Refrigerate until ready to use.
Cake: Heat oven to 350. Butter bottom and sides of a 9x13-inch baking pan. Line bottom with parchment and butter
parchment. In medium bowl, whisk together flour, baking powder, baking soda, cinnamon and salt to blend. Combine
butter and sugar in a large bowl. Beat with electric mixer until blended. Add eggs, beating until combined. Add
1/3 flour mixture, mixing until combined. Add applesauce, mixing until well combined. Add in another 1/3 of flour
mixture, then sour cream. Stir in remaining flour mixture. Spread evenly in prepared pan. Bake for 15 minutes.
Scatter topping over cake. Bake for another 30-35 minutes.
